A Month of Celebration

With the holidays approaching, managing stress becomes very important. Set up a routine that includes plenty of rest and exercise, along with a time to relax and savor the holiday season. Have lots of healthy foods on hand to take the place of snacks high in fat and added sugars. Keep up your healthy lifestyle and greet the new millennium with new energy.


Recipes of the Month:

Rudolf Sandwiches

Bread slices
Cherries
Peanut Butter Pretzel Sticks
Raisins
  1. Trim the crusts off slices of bread
  2. Toast bread and cut each slice into 4 small triangles
  3. Spread peanut butter on each triangle
  4. Decorate with raisins for eyes, a ½ cherry for a nose and pretzel sticks for antlers
  5. Sing "Rudolf the Red Nose Reindeer"

Candle Salad

Yields 10 servings

For 3-5 year olds

5 oz. Cottage Cheese (1 ¼ cups)
10 pineapple slices
5 bananas
Carrot curls

For 6-12 year olds

10 oz Cottage Cheese (2 ½ cups)
10 pineapple slices
5 bananas
Carrot curls

  1. Place pineapple slice on plate
  2. Place ½ banana upright in center of pineapple
  3. Spoon 1/8 cup or ¼ cup cottage cheese in pineapple slice (depending on ages of children)
  4. Place carrot curl on top
  5. Now you have a candle!

* For a snack, 1 serving (1/2 banana, 1 pineapple slice, 1/8 cup or ¼ cup cottage cheese) counts as one fruit/vegetable and 1 meat/meat alternate. (1/8 cup cottage cheese = 1 meat/ meat alternate for 3-5 year olds and ¼ cup cottage cheese = 1 meat/meat alternate for 6-12 year olds).
